INGREDIENTS
- 1 sprig fresh mint
- 1 ounce lime juice, freshly squeezed
- 1 ½ ounces Appleton Estate Reserve rum
- ¾ ounce pure cane simple syrup
- 1 dash Angostura bitters
- Champagne, to top
- Garnish: mint sprig
DIRECTIONS

In a shaker, gently muddle the mint and lime juice.

Add the rum, simple syrup and bitters, fill with ice, and shake until well-chilled.

Strain into a highball glass filled with fresh ice.

Top with Champagne and garnish with a mint sprig.
