Danish Syltede Asier

INGREDIENTS
- 1 Asie / Pickling Cucumber about 2 kg
- Salt
- 1 liter stock vinegar
- 500 g sugar (or less)
- 1 teaspoon celery seeds (or 2 dill sprigs)
- 1 teaspoon pink pepper
- 3-4 bay leaves
- 2 teaspoons yellow mustard seeds
- 1 hot chili, split in half lengthwise
DIRECTIONS

Peel the cucumbers, split lengthwise, scrape out the seeds and discard
them. -
Cut into slices of approximately 1cm.

Place in a bowl and salt generously.

Soak overnight, or one morning if you can't wait.

Rinse off the salt, let the cucumbers dry for 5-10 minutes.

Boil a brine of vinegar, sugar and spices in a 2-3 liter pot.

Season the sauce.

Place the dried asiatic herbs in a scalded preserving jar.

Pour the boiling brine over the jars until they are covered and close the jar immediately.

Let the Asians steep for a few weeks before using.
