Brioche Buns

INGREDIENTS
- 4 Tbsp milk
- 2 Tbsp water
- 2 Tbsp bread flour
. - 1/2 cup 98 degree milk
- 1 Tbsp yeast
. - 2 1/2 cups bread flour
- 2 1/2 Tbsp sugar
- 1 tsp salt
. - 1 egg (room temp)
- 1 egg yolk (room temp)
- 3 Tbsp unsalted butter (room temp)
. - 1 egg
- 1 splash of milk
DIRECTIONS

Combine milk, water and bread flour in small saucepot, whisk over medium/low heat until completely thickened (30 seconds).

Combine warm milk and yeast, stir and let bloom (10 minutes)

In stand mixer bowl, whisk together bread flour sugar & salt

With dough-hook on low speed, add yeast & milk, then milk/flour mixture, then egg products
-
When incorporated, add butter in batches
-
Knead 5 - 8 minutes until smooth

Form dough into ball and place in greased bowl , cover with damp towel, let rise 1 - 1.5 hours until doubled in size

Punch down dough, on floured surface, cut down into 6 even pieces

Shape into tight boules

Set on baking sheet covered in greased parchment paper

Cover & let rise 1 - 2 hours until doubled in size

Brush with egg wash

Bake at 375 degrees for 16 - 18 minutes
