Chili, Weeknight

INGREDIENTS
- 2-3 lbs ground beef
- olive oil
- 1 yellow onion, diced
- 6 cloves garlic, minced
- 2 tsp. cumin, ground
- 1 Tbsp. oregano, ground
- 2 Tbsp. chili powder
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 ½ Tbsp. tomato paste
- 16 oz. chicken stock
- 2 cans Ro Tel
- 1 can drained kidney beans
- 2 bay leaves
- Fish sauce
- Masa
DIRECTIONS

Brown the beef
-
Grind spice mixture

Add onions & garlic to the beef and cook until onions are soft

Season with salt & pepper. Add tomato paste and stir to combine. Add spice mixture, cook a few minutes until bloomed

Add tomatoes and chicken stock, beans & bay leaves and simmer for 30 minutes

5 minutes before removing from heat, add fish sauce & masa

Top with cheese, chopped green onions, peppers, cilantro and crema
